Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced

- 1 can (28 ounces) crushed tomatoes
- 1 can (14 ounces) coconut milk
- 3 cups vegetable broth
- 1 package (9 ounces) refrigerated cheese tortellini
- Salt and pepper to taste
- Fresh cilantro or parsley, chopped, for garnish
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add the onion and garlic, and sauté until the onion is translucent and the garlic is fragrant.
- Add the curry powder and stir to coat the onion and garlic. Cook for 1-2 minutes.
- Pour in the crushed tomatoes, coconut milk, and vegetable broth. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low and let simmer for 15-20 minutes.
