Here is a recipe for a classic Chocolate Yule Log:

Ingredients:

  • 4 eggs, separated
  • 3/4 cup granulated sugar
  • 1/4 cup cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • Powdered sugar, for dusting
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Chocolate shavings, for decorating

Instructions:

  1. Preheat your oven to 375°F (190°C) and grease a 15 x 10 inch jelly roll pan with butter. Line the bottom with parchment paper and grease the parchment paper.

  2. In a large mixing bowl, beat the egg whites until they form stiff peaks.

  3. In another mixing bowl, beat the egg yolks with the granulated sugar until the mixture becomes pale and thick.

  4. Sift the cocoa powder over the egg yolk mixture and add the vanilla extract and salt. Mix well.

  5. In a separate bowl, whisk together the flour and baking powder.

  6. Gently fold the flour mixture into the egg yolk mixture.

  7. Take 1/3 of the beaten egg whites and gently fold them into the egg yolk mixture. Once combined, fold in the remaining egg whites.

  8. Pour the batter into the prepared jelly roll pan, and smooth it out with a spatula.

  9. Bake for 12-15 minutes, or until the cake is springy to the touch and a toothpick inserted in the center comes out clean.

  10. While the cake is baking, prepare a clean kitchen towel by dusting it with powdered sugar.

  11. Remove the cake from the oven and run a knife around the edges of the pan to loosen the cake. Turn the cake out onto the prepared kitchen towel.

  12. Gently peel off the parchment paper, and starting from the short end, roll the cake up in the towel. Let the cake cool completely in the rolled up position.

  13. While the cake is cooling, prepare the filling by whipping the heavy cream with powdered sugar and vanilla extract until it forms soft peaks.

  14. Unroll the cooled cake and spread the whipped cream over the cake.

  15. Roll the cake back up, and place it seam-side down on a serving platter.

  16. To decorate, dust the cake with powdered sugar and top with chocolate shavings.

  17. Chill the cake in the refrigerator for at least 1 hour before serving.
