This sophisticated gluten-free rendition of a traditional Southern meal has crispy Cheddar waffles, chicken tenders, and a spicy maple syrup made from muddled blackberries.

Ingredients
Syrup:
4 brand-new blackberries
One tablespoon of ancho chile powder
1/4 tsp. red pepper flakes
a single cup of maple syrup
Chicken:
two pounds of chicken fingers
1 orange, juiced with zesting
To taste, add black pepper and salt.
Coconut flour, half a cup
1/2 cup of almond flour
1 teaspoon of garlic mince
smoked paprika, 1 teaspoon
2 14 cups all-purpose gluten-free flour
1 teaspoon of baking soda
1/2 tsp. dry rosemary
1/2 teaspoon of dried thyme
1/4 tsp. sea salt
frying oil
1 stick softened butter
maple syrup, 1 tbsp
1 cup of sharp Cheddar cheese, shredded
3 eggs
almond milk, 1 3/4 cups
Blackberries for garnish, 14 cup
Directions
STEP 1
In the bottom of a glass serving jar that can be microwaved, muddle 4 blackberries. Add the chili powder and red pepper flakes before adding the maple syrup and stirring quickly to blend.
STEP 2
In a big, shallow baking dish, put the chicken. Add a generous amount of salt and pepper, then drizzle with orange juice. Keep chilled until required. Coconut flour, almond flour, garlic, and paprika are combined with orange zest in a bowl. Discard the dredging mixture.
STEP 3
To begin the waffle batter, combine gluten-free flour, baking powder, rosemary, thyme, and sea salt in another basin.
STEP 4
Set the oven to 400 degrees Fahrenheit (200 degrees C). Cooking spray should be used to pre-heat a waffle iron in accordance with the manufacturer's recommendations.
STEP 5
Using an electric mixer, combine butter and maple syrup in a bowl and beat until smooth. One egg at a time, add. 3 alternate batches of the milk and gluten-free flour mixture should be added gradually. Just mix the Cheddar cheese after adding it. Fill the waffle maker with batter and heat it up. Cook for 6 to 8 minutes each waffle, or until crisp and dark brown. While cooking the chicken, place the waffles on a baking sheet and keep them warm in the preheating oven.
STEP 6
Another baking sheet should be lined with parchment paper. Each chicken tender should have any extra orange juice gently shook off of it before being thoroughly coated in the coconut flour mixture. On the prepared baking sheet, put the breaded chicken. Take the waffles out of the oven and keep them warm.
STEP 7
Cook the chicken in the preheated oven for about 20 minutes total, turning it over halfway through. In the middle, an instant-read thermometer should register at least 165 degrees Fahrenheit (74 degrees C).
STEP 8
Warm the syrup in the microwave for approximately a minute. Add a couple of heated chicken tenders and a bunch of blackberries on the top of each waffle. Pour on the heated hot maple syrup.
Cook's Note: The waffles will take longer to bake through than a typical waffle cycle.
